
The gal behind this blog is Charlene Choi. She turned Paleo in 2013 because she was suffering from chronic gut problems and wanted to see if real food could help her managing her symptoms. Like me she loves real food. Unlike me she has the magic cooking touch which result in yummy food experiments.
So I asked her if could re-post some of her recipes because this kind of goodness must be shared with the HK Paleo community. I'm hoping I can get her to write some recipe posts for Packs Of Packs. In the meantime enjoy one of her nice recipes she came up with last year.
Reusing juice pulp I - juice pulp bread

1 carrot
1 beet
1 cucumber
Few pieces of cabbage
2 stalks of celery
All wonderful veggies are from the amazing Eat Fresh (www.eatfresh.com.hk) juicing box :)
So... We are left with juice pulp everyday. I have been experimenting with various recipes to reuse my juice pulp, including juice pulp crackers, veggie burger patties, "meatless" balls, etc. My newest recipe is the juice pulp bread:
2 cups of juice pulp
2 tsp cinnamon
2 tbp honey
3 eggs
1/2 cup coconut milk
1/2 coconut oil
1. First blend the dry ingredients with the juice pulp
2. Add in the coconut oil and honey
3. Mix and then blend in the eggs and coconut milk
4. Pour in a bread tin and bake in oven for 20-25 mins at 180 degrees
P.S. my oven was broken so I used my dehydrator and cranked it up to its highest setting at 68 degrees and dehydrated for 4 hours (you might want to check earlier if you want a moister version)
