So how come I changed my stance towards potatoes and the potato hack? The potato and white rice for that matter have returned into my good graces last year some time before I went to India. One of my readers pointed me towards Richard Nikoley's blog Free The Animal. He is an advocate for gluten-free starches. He especially focuses on potatoes and white rice as they are good sources for resistant starch which are important to the gut microbiome. According to Wikipedia:
